1-Deoxyfructosyl-Val is a research tool used to study the roles of ligands and receptors. 1-Deoxyfructosyl-Val binds to active sites on ion channels and blocks the flow of ions through these channels. It has been shown that 1-deoxyfructosyl-val can inhibit the binding of antibodies to peptides, which are small proteins.
