It is an organic ester with a hydroxyl group at one end of the molecule and a carboxylic acid group at the other end. The methyl group is attached to the carbon atom adjacent to the ester carbonyl, and the propyl group is attached to the carbon adjacent to that. Methyl 4-hydroxy-3-propylbenzoate is soluble in organic solvents, but insoluble in water. It has a strong odor and mild taste. It can be made by reacting ethyl chloroformate with 3-propylbenzaldehyde in an organic solvent such as dichloromethane or chloroform.
