CAS:16-O-Methylcafestol is a diterpene that has been identified as an important component of coffee. It is present in the arabica variety, but not in the robusta variety. The presence of 16-O-methylcafestol has been shown to have physiological effects. It can be used as a human serum sample preparation method, where it can be used as a marker for lipid peroxidation and oxidative stress. 16-O-Methylcafestol is also found at high levels in human serum samples from patients with diabetes mellitus.
