CAS:Isoamyl acetate is a volatile, colorless liquid with the smell of bananas. Isoamyl acetate is found in many foods and drinks, such as banana, apple, pear, pineapple, and strawberry flavors. It has been shown that isoamyl acetate can inhibit the growth of resistant mutants of Escherichia coli by inhibiting their ability to synthesize proteins for locomotor activity. This inhibition may be due to the reaction mechanism that involves methyl ethyl alcohol (MEA). Methyl ethyl alcohol is involved in the production of isoamyl acetate. MEA reacts with 3-methyl-2-oxobutanoic acid (3M2B) to form 2-methyl-3-oxopropanoic acid (MOPA) and then reacts with ATP to form AMP and MOPP.
