This fatty acid can be used as an analytical method for determining the concentration of fat cells in a sample by measuring the weight of glycerides in a dried, crushed sample. Glyceryl triundecanoate has been shown to increase the expression of protein genes and decrease the expression of fat cell genes, indicating that it may have anti-obesity properties. It also reduces chronic oral intake and dry weight gain.
