CAS:2-Ethyl-3-methylpyrazine is an organic compound that is found in a variety of plants, such as kidney beans. It is used in analytical methods to measure the levels of fatty acids in a sample by using solid phase microextraction. This compound has been shown to inhibit the formation of chlorogenic acid and other phenolic compounds from glycerol in a reaction with caffeic acid. 2-Ethyl-3-methylpyrazine also inhibits lipid peroxidation and prevents cell death in xenopus oocytes, which may be due to its ability to increase the frequency shift of light.
