Lauroyl-3-chloropropanediol is a fatty acid esters that is used in food products, such as margarine. It can be synthesized by reacting margaric acid with dimethylamine and chloroacetic acid. This reaction occurs in aqueous media at room temperature for 2 hours. Lauroyl-3-chloropropanediol also has applications in vitro studies as a feedstock for the production of fatty acids and monolayer surfactants.
