In the presence of ammonium nitrate, it forms methyl 3-O-benzyl-D-glycerate nitrate (CH3OCH2CH(ONO2)CO2H). When heated with dilute acids, it gives carboxylic acids, alcohols, oxides of nitrogen, and carbon monoxide.
