It is produced by oxidation of carbohydrates and has the chemical formula CH3OCH2CH(OH)CO2H. The compound crystallizes from alcohols and ethers, with a melting point of about 100°C. In the presence of ammonium nitrate, it forms methyl 3-O-benzyl-D-glycerate nitrate (CH3OCH2CH(ONO2)CO2H). When heated with dilute acids, it gives carboxylic acids, alcohols, oxides of nitrogen, and carbon monoxide. Methyl 3-O-benzyl-D-glycerate has been used as an intermediate for the synthesis of other glycerates.
