    Mutatoxanthin is a carotenoid that has been found to have antioxidant and anti-inflammatory properties. It is also an analog of astaxanthin, which is a carotenoid with the ability to inhibit lipid oxidation. Mutatoxanthin has been shown to inhibit reactive oxygen species by binding with them and reducing their harmful effects on cells. Mutatoxanthin can be synthesized from capsicum annuum, which contains the hydrochloric acid needed for the reaction. The fatty acid content of this plant makes it a good source for synthesis reactions involving esters and amides.
