Isobutyl gallate
CAS:Isobutyl gallate is a synthetic antioxidant that can be used to prevent oxidation of fats and oils. It is a free radical scavenger that reacts with the hydroxyl and pyrazine groups in unsaturated fatty acids, forming esters. The antioxidant activity of this compound has been attributed to its ability to inhibit lipid peroxidation by forming stable radicals that react with the peroxide group. Isobutyl gallate is also an effective antithrombin, which inhibits blood coagulation and platelet aggregation.
