CAS:Calcium propionate is a calcium salt of propionic acid. It is used as a preservative in food and feed products to inhibit the growth of mold, yeast and bacteria. Calcium propionate has been shown to have antimicrobial properties against human pathogens and is effective against certain bacterial strains. It inhibits microbial activity by reacting with the surface of the microorganism or by reacting with a reactive site on the molecule that occurs in an infected organism. This reaction may also inhibit enzyme activities in the microorganism, which can lead to cell death.
