It has a fruity odor and can be used as a flavoring agent. 3-Methyl-2-buten-1-ol is synthesized by reacting ethyl diazoacetate with butyric acid in the presence of an inorganic acid. This reaction mechanism involves the elimination of water, which generates two molecules of 3-methyl butanal, or 3MB. The control agents involved are prenyl group and hydroxyl group, which inhibit the reaction by abstracting hydrogen from the ethyl diazoacetate molecule. The kinetic data for this reaction was determined by phosphatase inhibition studies as well as hydration measurements.
