Zinc phytate
CAS:Zinc phytate is a metal chelator that is used as a control agent in the production of fats and oils. It is also used to remove hydrogen chloride from metal surfaces and to reduce the growth rate of bacteria. Zinc phytate binds with hydrogen or hydroxide ions to form zinc phosphate, which may serve as an intermediate for metal surface reactions. Zinc chelates have been shown to have synergistic effects when combined with other compounds, such as lipid peroxides. The structure of zinc phytate has been determined using x-ray absorption spectroscopy and nuclear magnetic resonance spectra.
