CAS:3-Methylsalicylic acid is a naturally occurring carboxylate that has been shown to be an inhibitor of the hydrogenation of polyunsaturated fatty acids. 3-Methylsalicylic acid inhibits the binding of benzyl groups to intramolecular hydrogen and hydroxyl groups, which are required for the formation of a covalent bond.
