O-Acetyl isovanillin has been shown to react with copper oxide, which generates active oxygen species (AOS). This reaction has been shown to be mechanistically similar to the Fenton reaction. O-Acetyl isovanillin has also been shown to react with an electrochemical sensor, leading to a decrease in current.
