It inhibits the activity of enzymes such as methionine synthase, which are required for the synthesis of proteins. o-Anisidine also has genotoxic effects and can cause mutations in DNA. Studies have shown that o-anisidine is metabolized by oxidation to aniline, which is then conjugated with glucuronic acid or excreted as an amine or sulfate.
