Ácido benzoico, 3,4,5-trihidroxi-, éster propílico, comúnmente conocido como galato de propilo, es un compuesto orgánico con propiedades antioxidantes. Se deriva del ácido gálico y se caracteriza por sus tres grupos hidroxilo unidos a un anillo bencénico, que contribuyen a su reactividad y solubilidad en varios disolventes. El galato de propilo aparece como un polvo blanco a amarillo pálido y se utiliza a menudo como conservante alimentario y antioxidante en grasas y aceites, ayudando a prevenir la rancidez. It has been shown to inhibit the activity of a number of receptor proteins, including the hl-60 cell line. Propyl gallate inhibits the metabolism of glucose by inhibiting enzymes involved in glycolysis, leading to toxicity studies for infectious diseases. This compound also inhibits the production of reactive oxygen species and prevents apoptosis by blocking the MCL-1 protein, which induces cellular death.
