Aspartamo es un edulcorante artificial bajo en calorías ampliamente utilizado como sustituto del azúcar en varios productos alimenticios y bebidas. Químicamente, es un éster metílico de dipeptido compuesto por dos aminoácidos: ácido aspártico y fenilalanina, unidos por un enlace peptídico.
