Allura red AC inhibits the growth of bacteria by binding to DNA and altering its structure. It has been used as a model for nuclear dna in analytical methods, with the dye serving as an optical sensor. Allura red AC is not toxic to humans when ingested in small amounts. It has been shown to have genotoxic activity and metabolic disorders at high doses.
