Amaranth also has been shown to reduce the growth of microorganisms by adsorbing them onto its surface. The effects of amaranth can be enhanced by adding an antimicrobial peptide to its surface. It also has been found that amaranth contains chemical compounds with antioxidant properties, which may help to prevent or treat coronary heart diseases.
