    2-Methyl-3-(methylthio)furan is an antiproliferative compound. It has been shown to inhibit the growth of cancer cells in vitro at optimal conditions. The antiproliferative effect was determined by a number of techniques, including reaction system and food chemistry. 2-Methyl-3-(methylthio)furan reacts with carbon source such as maltol to form volatile compounds, which are detected using gas chromatography-mass spectrometry (GC-MS). The volatile compounds were identified using GC-MS analysis and headspace analysis. The temperature range for the reaction was between 40°C and 60°C, while the reaction time was around 20 minutes at 50°C.
